Holiday Roast money saving idea

I am always amazed at how many Prime Ribs are purchased each year during the holidays.  The net time you go shopping look at the price of the Rib Eye roast then look at the price of a NY striploin.  Usually they are pretty close in price but during the holidays demand increases for the Prime Rib and so does the price usually .50-$1.00/lb.  During the holidays you can expect to pay between $4.99-$6.99/lb for a decent roast, now compare that to a NY and you'll usually save close to .75 per pound.  Also depending on the state of the area where the beef is slaughtered from if it is a real cold region, or if it was left on the feed lot longer to gain sale weight, you may find a larger "kernel" in the roast.  The kernel is the section of fat you find next to the eye of the roast, if that is too large now you are affecting the yield.  So as an alternative look at the NY strip when considering your holiday roast this year.

Also, as a bonus tip just before roasting get some butcher twine and tie a loop in 4 even spaces across the roast.  This will minimize the constriction during cooking and on average you'll get 2 more slices per roast.
