Chana Masala

One of my readers recently asked for a good Indian crock pot dish, I've made this several times and love it!! Keep those requests coming!!


Chana Masala
· 2 canola oil
· 1 onion, diced
· 2 cloves garlic
· 1 inch ginger, peeled and grated
· 1 tsp cumin
· 1 tsp coriander
· 1 tsp turmeric
· 1 tsp salt
· 1 15 oz. can chickpeas
· 12 oz diced tomatoes
· 1/2 tsp garam masala
Directions:

1. Canned Chickpeas: rinse and drain them thoroughly before using them
2. In a stainless steel or cast iron pan, sauté oil, onions, ginger, and garlic for 5 minutes
3. Place onion mixture and all other ingredients except for garam masala in a Crockpot
4. Cook on low for 3-5 hours. Before serving, add garam masala

6. If you don't have a Crockpot, you can make this recipe by cooking on medium high heat on the stove in a covered saucepan for 30 min in place of using the Crockpot
7. Try adding other veggies, like carrots or bell peppers

I need some good ideas for an easy dinner. Something cool but not too hard to do.

I'm gonna try this tomato soup recipi though one night.

Ok Kendra,
Well a lot depends on what you have on hand, do you have left-overs to use? But here are a few that can be done in less than 30 min.

If you have some chicken breasts let's do this one:

Chicken Picatta

2 cups Flour (seasoned with salt and pepper
3-4 Chicken breasts
1/4 Cup Olive Oil
1/4 Cup Lemon Juice
1 1/2 Cup Chicken Stock (or for extra flavor substitute the 1/2 cup with white wine)
1 Tablespoon Capers(if desired otherwise leave out)
1/3 Cup Butter

Dust the chicken breasts with the seasoned flour; shake of any excess. Heat the olive oil in a heavy sided medium saute pan over medium heat and then add the chicken breasts. Saute until golden brown on both sides. Once the chicken breasts are browned, drain the oil and add the lemon juice, chicken stock, and capers to the pan with the chicken. Reduce for about 5 minutes, turning the chicken breasts halfway through. The chicken is done when it is firm to the touch. Turn off the heat and add the butter, stirring until melted. Put 1 chicken breast on each of 4 plates and drizzle with remainder of the sauce.

Or depending on if you really want to go an easy route, there is always Mac and Cheese but leave out the powdered cancer and add your own cheese like pepper jack, or swiss with the milk and butter.
