Quick note about seafood
Since we are in the time of major feasting, I thought I would bestow some gems about Seafood if you're buying for your holiday entertaining. I recently heard a woman at the seafood counter at my local grocery store tell her friend after looking at some Salmon in the case, "forget it...look at that sign...color added, gross" Ok, relax people, there isn't a factory out there pimpin' out salmon with an airbrush (although that dose sound cool). What this means is that when the fish are in the hatchery they are deprived of the environment which provides them their typical diet which is shrimp, and the carotene's in the shrimp is what gives the Salmon that pretty red color. So what is done, is the carotene's are supplemented in the feed that is given to the fish, and is harvested naturally from shrimp anyway. Also, you may notice when buying seafood that they are displaying the country it came from, this is now the federal law. These are known as the COOL regulations, or Country Of Origin Or Landing. If your vendor or store is not providing this....run.
